for example i like the caestus, and crystal magic weapon (dont ask why, punching is satifying).

so the best build to get max damage is just 30 int + max levels in strength with heavy caestus??

or am i wrong and magic weapon style spells DO scale with int, like other spells?

would you be able to tell me how int stat interacts with spell buff stat??

is it like spell buff = % of int, and then magic weapon = % of spell buff or something, making them all interweaved sort of?

The scaling number can vary depending on the catalyst used, some have higher base and weaker scaling, some have scaling in different stats (like a few that use faith).

This. There is no magic formula for spell buff. Every staff has a base spell buff value, and a different Intellect scaling value (those letters you see under a stat on the weapon). A staff with A scaling is going to get more spell buff from intellect than a staff with C scaling, but the staff with C scaling might have a higher base Spell Buff, thus making it more useful at lower intellect levels.
