Melting Chocolate Ball Dessert

The hugely trendy Melting Chocolate Ball Dessert is a tower of brownie, ice cream and fruit. Top it with the chocolate ball and pour some hot fudge on top to get this showstopper dessert!

Alright, maybe I’m a couple years late here, but it’s always been on my list to recreate that crazy looking chocolate ball dessert. If you think about it, it’s really not that complicated to make.

First off, you need a big mold to make the chocolate ball. Everyone (myself included) uses an oversized ornament, like this one . It may take a little finesse to get apart in one piece, but if there are any imperfections, it’s easy to hide. You’ll wind up melting off 1/3rd of it in order to get it to fit over your dessert anyway.

I used brownies and ice cream in this – I know, so cliche, but there’s a reason why everyone does it. It’s always good!

But there are plenty of other ideas and ways to customize this. Maybe stack some cheesecake bars, cover it with a white chocolate ball and pour hot strawberry sauce over it. Or maybe have a slice of tres leches cake with strawberries and mango, top it with a scoop of swiss meringue, cover with a white chocolate ball and pour some hot cinnamon cream over it. (Ugh this sounds awesome – putting it to my todo list immediately)

Either way, it is a great dessert to serve on special occasions – it becomes an event in itself!

Magic Chocolate Dessert Ball

Fillable holiday ornament balls are available at craft and baking stores or on-line.

Makes 2 magic dessert balls to share = 4 servings

Lindt Excellence Dark 70% Bar 100g Medium Share

Ingredients

  • Chocolate Ball:
  • 200g Lindt EXCELLENCE 70% Dark Chocolate, finely chopped
  • 4 to 8 sheets gold leaf
  • Hot Berry Chocolate Sauce:
  • 1 cup (250 mL) (175 g/6.2 oz) mixed berries (such as chopped strawberries, raspberries and blueberries)
  • 1/3 cup (75 mL) sugar
  • 1 tbsp (15 mL) water
  • 3/4 cup (175 mL) (6 fl oz) 35% whipping cream
  • 1 tsp (5 mL) vanilla extract
  • 200g Lindt EXCELLENCE 70% Dark Chocolate, finely chopped
  • Assembly:
  • 2 Lindt Chocolate Teddies
  • 2 brownies
  • 2 scoops vanilla ice cream
  • 1 cup (250 mL) fresh medley of berries
  • 2 (6-inch/15 cm) plastic ball molds, such as fillable holiday ornament ball

Method

Step 1.

Chocolate Ball: Place chopped chocolate in microwave-safe bowl. Microwave on MEDIUM powder, stirring every 30 seconds for 1 to 2 minutes or until smooth and melted.

Step 2.

Pour half the chocolate inside each ball. Turn gently to make sure inside is fully coated. Transfer ornament to freezer. Turn and rotate every 2 to 3 minutes for 10 to 12 minutes to ensure even coating of chocolate. Transfer to refrigerator and let stand for 30 to 60 minutes or until chocolate is hardened and set.

Step 3.

Carefully remove each chocolate ball from each mold. Transfer back to refrigerator.

Step 4.

Heat 2 ramekins in moderate oven for 15 minutes or until thoroughly heat. Carefully transfer to baking sheet bottom side up. One at a time gently press chocolate ball onto the ramekin to melt the bottom to create an opening wide enough to cover the dessert. Transfer to parchment paper lined tray and refrigerate dome for at least 1 hour or until set again. Cover top of each ball with gold leaf. Refrigerate balls until ready to serve.

Step 5.

Hot Berry Chocolate Sauce: Add berries, sugar and water to saucepan set over medium heat. Cook for 5 minutes or until juices start to thicken to jammy consistency. Reduce heat to low. Stir in whipping cream and bring to a simmer. Remove from heat and stir in chopped chocolate and vanilla until chocolate melts. Keep hot.

Step 6.

Divide brownies, ice cream and berries between 2 serving plates. Cover each dessert plate with chocolate ball. Garnish plate with Lindt Chocolate Teddy.

Brownie Stuffed Magic Chocolate Ball

This Brownie Stuffed Magic Chocolate Ball with Caramel is a decadent dessert when hot caramel melts the chocolate to reveal a brownie and fresh raspberries too! Our salted caramel sauce is the perfect finish to this magical dessert that looks oh so fancy but is so easy to make! You can also pour hot fudge on top of this magic chocolate ball which is more common but I say why not have caramel and fudge because I'm greedy that way.

What do you put inside a Magic Chocolate Ball?

Only your imagination is the limit when it comes to what to have in this delicious magic chocolate ball. The most common of course are brownies and ice cream that you get to enjoy once they are revealed when the chocolate ball starts to melt. I went with a bite-size brownie and raspberries topped by a piece of Caramilk bar (can you say hello one way to use up some Halloween candy?!). I didn't put in ice cream this time but you totally can and it's super delicious too. I just have a thing for chocolate and raspberries and add my salted caramel sauce and even some fudge drizzled on the plate and it's one decadent dessert. The Magic Chocolate Ball while easy to make always impresses anyone we serve it to. It just looks fancy and come on, it's almost like opening a present while you watch the chocolate melt when you pour the warm sauce (in this case salted caramel) over top the ball and then you get the big reveal of the scrumptiousness inside.

Now to start you will need a mold similar to the one above, at least I did and it's the only way I know how to make the magic chocolate ball easily. You can get a similar one on Amazon and then you will be on your way to making your own magic chocolate balls and wowing everyone you make them for. The photo above shows the magic chocolate ball before it's assembled and the tasty ingredients we put inside of our ball such as the brownie bite, raspberries and the pieces of a Caramilk bar. As you may have noticed we also put a piece of the Caramilk bar on top of the ball and then poured the warm salted caramel sauce on top.

The sweetness of the Caramilk bar piece with the semi-sweetness of the chocolate ball perfectly complemented each other and of course, the raspberries, brownies and salted caramel sauce made this dessert a delight for our tastebuds and our tummies.

How do you make a Melting Magic Chocolate Ball?

As mentioned earlier it's easier than you think. You will need a mold similar to the one we've already mentioned. You'll need the following:

Magic Chocolate Ball Recipe Ingredients

  • Chocolate chips (milk, dark, white or semi-sweet your choice we used semi-sweet here) – melted
  • Raspberries (optional)
  • 2 bite brownies (or homemade brownies cut small)
  • Salted Caramel Sauce (our recipe is HERE) or hot fudge sauce or go wild and have both.
  • 1 Caramilk bar (optional)

The melted chocolate goes into the silicone molds and then you will place in the freezer and go between the freezer and adding more chocolate to the molds to get the perfect thickness. To even out the edges of the dome halves you will use a warm frying pan.

Magic Chocolate Ball Dessert

When it comes time you will fill half of the dome with your favourite goodies that will fit and then the remaining half of the domes (which will be the top) you will even up the edges again on a warm pan then place immediately over the filled half of the dome and hold to set. Then watch the magic happen when you pour the warm salted caramel sauce over it (Full instructions in our recipe card).
