Green Witch Juice Bar & Cafe in Highland promotes healthy eating and drinking

When seeing the moniker the Green Witch Juice Bar & Cafe people may mistakenly assume that the downtown Highland business is singularly focused.

“There’s a common misperception that people think we only serve juices. We are really more than that,” said Verginiya Burgess, who owns the Green Witch Juice Bar & Cafe with her sister, Tina Bilow.

“We offer healthy food and different specialty coffees. It’s not just juice. It’s healthy eating and healthy drinking. We approach food in a different way. We make it healthy and tasty at the same time,” Burgess said.

Here is the dish on this establishment, which opened in October 2018 and is run with the sisters’ mother, Bobi Milanova of Highland:

On the menu: “When people think healthy, they think cardboard food. It’s a different approach to recipes and nicely cooked food that is a healthier option than fast food,” said Burgess of Highland.

“We always include superfoods or different things that are especially good for you.”

About the owners: “I saw there was a need for that type of business in Highland. I do have another business here, which is a day spa, and we incorporate a lot of holistic treatments and natural products,” said Burgess about Espa, which she established approximately seven years ago.

“It felt like people needed that natural aspect of their life in their diet as well so that’s what prompted us to open the Green Witch.”

A philosophy: The Green Witch Juice Bar & Cafe was inspired by the book “The Green Witch: Your Complete Guide to the Natural Magic of Herbs, Flowers, Essential Oils, and More” by Arin Murphy-Hiscock.

“The green witch is actually a lady who is a naturalist and an herbalist. She uses herbs, plants and things from the Earth,” Burgess said.

Decor: “It’s an earthy, green and serene atmosphere. It’s very natural,” said Burgess about the Green Witch Juice Bar & Cafe, which features seating for 25 people in the main dining area and approximately 15 more in the coffee lounge.

“We wanted to make it feel like you’re in nature and not so much indoors. We do have some outdoor seating. People need to spend more time outdoors and enjoy nature, the sun and relaxing outside.”

Specialties: Popular sandwiches include avocado chickpea toast.

“Avocado has a ton of omegas, vitamins and nutrients that are really good for you,” Burgess said.

“The Green Sand’Witch is a powerhouse of a sandwich because it has all kinds of different vegetables in it so it’s a variety of flavors, colors and textures in one sandwich.”

We’re different because: “We host a lot of different events and classes. I want to make the place not just a cafe but also a gathering place where people can come and learn different things about healthy living,” Burgess said.

“We’re trying to be a local hub where people can come and mingle.”

Prices: Food starts at $4 for soup, $5 for crepes, $6 for salads, $6.50 for sandwiches, $7 for flatbread pizza and $8 for Buddha bowls.

Drinks start at $1.50 for classic coffees, $1.95 for chilled drinks, $2.50 for hot drinks, $3.95 for signature drinks, $5.95 for smoothies and $6.95 for juices.

Their vegan options are really good and flavorful. The people working were very polite and made sure we appreciated our food experience. I highly recommend the Portobello Sandwich, I was craving another one this morning.

I had the vegan grilled cheese and my wife had a wrap with some pasta salad. Everything was great.

I would have given 5 stars if i could! I got the Green Sandwitch with a side of pasta salad. The sandwich was a huge chickpea salad sandwich and it was loaded with greens and tomatoes. The pasta salad was very flavorful with tons of veggies.

Happy. another great Vegan-friendly spot - Edit

Discovered thru Door Dash. Has many Vegan options, which made it harder to choose, but stuck with my 1st choice, the green sandwich. Hearty, including the avocado. Added their giardiniera & it was delicious. Was pleasantly surprised chips were sweet potato chips.
Good place for anyone. Teen had the Sicilian panini sandwich & the Tropikale Smoothie. She loved both. Will definitely be back!

1. John - 2 stars - I was really disappointed with my experience at the Green Witch Cafe. First of all, the service was incredibly slow. It took forever for our food to arrive, and when it did, it was lukewarm at best. The quality of the food was also subpar. My sandwich was bland and lacked flavor. Additionally, the prices were much too high for what we received. I wouldn't recommend this place to anyone looking for a good meal.
2. Sarah - 1 star - The Green Witch Cafe was a huge letdown for me. I had heard great things about their coffee, but when I ordered a latte, it came out with burnt milk and a bitter taste. It was undrinkable. The ambiance of the cafe was also not appealing. It had a dark and gloomy atmosphere, which made it very uninviting. Overall, I was extremely disappointed with my experience and would not return.
3. Michael - 2 stars - I was really excited to try the Green Witch Cafe as I had heard it had a great selection of vegan options. However, when I went there, I found the menu to be very limited and the vegan options were not as impressive as I expected. The food I ordered was also nothing special. It was average at best and didn't leave a lasting impression. I think there are many better vegan cafes in the area.
