But I can only handle certain sweeteners: erythritol, xylitol, stevia(stevia extract, reb A, etc), and monk fruit. Possibly FOOS(found in Swerve) and vegetable glycerin (yes, that's a sweetener).

So, I was torturing myself at the grocery store the other day, looking at the syrups to see if there was another one I could try. I'd already passed on the Sweet Leaf syrups -- got excited about stevia sweetened syrup until I saw it was also loaded with sugar. But then I saw Birch Benders Magic Syrup for only $6.99. That's cheap, compared to Lakanto. And very similarly sweetened.

Magic Syrup ingredients: water, natural flavor, cellulose gum, lactic acid, monk fruit, xanthan gum. Okay, not exactly what I would call healthy -- not exactly food, really. But nothing that I knew for certain would make me sick. So in the cart it went -- we'll see if it's edible. Isn't experimenting with sugar substitutes fun.

I made some french toast and bacon for lunch today. Yes, lunch. I used Dave's Killer Bread (thin slice power seed) -- one slice. Dipped in a beaten egg with vanilla and half and half and fried in leftover bacon fat. Sprinkled a little cinnamon on top, just because. The bacon is overcooked, sorry. Not quite burned (but not quite not-burned either). Oops.

The syrup is thin, probably a result of being sugarless. It tasted. okay. Kind of mape-ly, with a weird/funky citrus aftertaste. Don't think I will be using on french toast or keto pancakes again. Would probably taste good in a recipe that calls for maple syrup or flavoring, so not a total loss. It will get used.

And I guess I'm going online to order more Lakanto syrup.
