All Hail The Magic Muffin!

Last week's cocoa recipe got me thinking about how I should share with you this amazingly easy recipe for muffins.

It's great when you need:
a quick dessert for the kids
a take along to a party - (who doesn't like fresh baked muffins for breakfast the next day?)
a way to say "I love you " to your family
and any other occasion you can think of the calls for something warm from the oven.
Here's the basic recipe:

3/4 cup of milk
1/2 cup of oil (I always use olive oil)
1 egg

2 cups flour
2/3 cup sugar
3 tsp baking powder
1 tsp salt
1 tsp of whatever spice you'd like - cinnamon, pumpkin pie spice, whatever
1 cup chocolate chips, nuts, whatever add ins you'd like.

Beat together milk, oil and egg. Add in flour, sugar, baking powder, salt an spices and any add ins. Fill muffin cups, bake at 400 degrees for 16 minutes.

Done. It's that easy. Really.

And - if you want to fool the kids into thinking they're cupcakes, just add 4 tbs. cocoa to the mix and drizzle some white icing over them. Still done.

I've lost count as to how many times I've made this recipe. Always good, always easy. And much faster then running out to the store for something when you have a craving for something sweet.
