So I actually do know where Ranni the witch is initially.

1st you find her at Church of Elleh, after receiving the horse.

2nd you find her at Ranni's Rise where she is sitting on the top of the tower.

I accepted to become her consort or whatever, I went to Sofia's river and talked with Blaidd where he tell's me to talk to Seluvis or do whatever I see best.

I went to Seluvis and he gave me a potion to kill a woman which I can't remember her name, and a letter to give to Sellen.

The woman I'm supposed to poison is a good woman, she has helped me out, so I didn't wish to kill her because Seluvis "Said so", and Sellen. well I messed up her quest and now I can't even talk to her.

So with that said, I went back to Seluvis and attacked him, to me he is a bad guy with attitude problems, I don't like him so I saw the best solutions, anyone whom annoys me or does not value a life is going to die by me. So I attacked him, and he vanished.

I went to Sofia's River again and Blaidd started to attack him, had to put him down, can't allow someone raising a sword at me.

Wen't back to Ranni's Rise and Ranni the witch is no longer there, I want to kill her but I can't find her.

Lol. You door knob. You literally ruined the quest chain.
You can never see her again until NG+ now. That's kind of funny tbh.
Yeah you never should have pursued the potion quest yet anyway. Just do the tasks from Ranni and Blaidd. Blaidd is very important and heavily linked with that quest line. Putting him down as you said made ranni disappear forever. Also the sorcerer was part of the quest chain too, thats why blaidd became aggressive. It's all linked.
