Nextbite and Tom Colicchio Partnering for New Ghost Kitchen in Los Angeles
Nextbite, a leader in virtual restaurants, is partnering with celebrity chef Tom Colicchio to open a series of ghost kitchens, including one in Los Angeles, centered around ‘Witchcraft Sandwiches.

Opt out at anytimeColicchio first opened ‘Witchcraft in 2003 with co-owner Sisha Ortuzar in New York City. Their goal with that restaurant was to create and serve the perfect sandwich. Now, Colicchio is expanding his reach and helping create a network so more restaurants can be easily accessible. The new ‘Witchcraft ghost kitchen will feature a virtual restaurant menu with both ‘Witchcraft sandwiches and other local eateries partnered with Nextbite. The concept will not start/launch in Los Angeles and Denver. Instead, it will roll out nationwide and include the two cities.
The restaurants associated with this ghost kitchen have not been announced yet, a representative of Nextbite tells What Now Los Angeles. When this concept launches, customers will find no physical address or storefront, as this will be a delivery-only service. Nextbite is the only virtual restaurant company that combines restaurants with technology expertise to help existing restaurants successfully leverage their kitchen capacity to grow delivery revenue.
Colicchio first made his debut in New York with restaurants including The Quilted Giraffe, Gotham Bar & Grill, and Gramercy Tavern. Then, in 2001, he opened Crafted Hospitality to launch a series of fine dining restaurants. The group is responsible for opening New York’s Craft, Temple Court, and Vallata; Long Island’s Small Batch Los Angeles’ Craft Los Angeles; and Las Vegas’ Heritage Steak and Craftsteak. During the pandemic, Colicchio co-founded the Independent Restaurant Coalition and played a significant role in the passage of the American Rescue Act.
“Nextbite, with its unwavering focus on quality food and menus, is the ideal partner to help us expand the reach for our signature ‘Wichcraft sandwiches,” Colicchio said in a press release. “With its deep restaurant roots, Nextbite shares our passion for restaurants and truly cares about helping operators to be successful today and in the future.”

In what must have been a somewhat desperate attempt to get me to eat as a young girl, my mom would make me witch sandwiches regularly, and I loved them. They were mostly made out of cheese and lunch meats cut into specific shapes which, when assembled, formed a most enticing sand-witch. She had a pointy hat (complete with buckle), a pretty, cheesy dress, and even a broom.
If Mom wasn't in the immediate vicinity while I was eating my witch sandwich, I would report excitedly on my progress:
"I'm eating her left eye now!"
"I'm eating her broom!"
"I just ate her whole dress. "
Mom also dyed my milk red, so that I could pretend that I was a vampire drinking blood. And sometimes she let me pretend I was a dog, so I could eat under the kitchen table.
