How is the Curseforge website spyware what?

Anyways, @OP the reason why is because mod creators aren't uploading them there. It's tha simple really. Nexus Mods is usually also a very popular mod hosting site, and some Lethal Mods are hosted there but very few in comparison to Thunderstore.

I don't know why the specific website it is hosted on really matters, curseforge, nexus, thunderstore, they all practically work the same, you get a download button that downloads the files and then you dont have to worry about it anymore.

Only thing that may change is the launcher you are using but in all honesty, if you are playing games that dont natively support mods, expect that different games will require different (sometimes their own) mod launcher.

See above, there are only 4 pages worth of mods posted on Nexus, that's less than 80 mods. Thunderstore has like 80+ pages of mods. Up to you to decide whether that's viable or not.

I'm very new to this - as in, I've just learned what Modrinth and MultiMC are. I'm low vision and I've been having trouble finding resources to help me with the modpack I want to create and how to admin/run the server. I've downloaded the 1.20.1 forge server and it's in a folder on my desktop. In the mods folder, I've put a few mods I downloaded from Modrinth. When I click run.bat it takes a little bit to load then seems to work okay. Another window appears with a white box on the left side and a ton of writing, I'm assuming code, on the right. I'm hoping to use a dedicated IP to run the server off of instead of my home one. How do I start the server instance with MultiMC? How are performance/optimization mods used server-side? Are any specific ones easier to use/more accessible than others? Are there any tips for going through the many lines of code in the logs? Can I search for specific words instead of having my screenreader do every line?
