How do you explain the difference between "Spells Known" and "Spell Slots per Level"?

So I'm trying to clarify to one of my new players (Feral Winged Tiefling, Level 2 Divine Soul Sorcerer w/ Law Affinity) about the way spells known and spell slots work, what they understood so far is that:

They can learn a total of 3 spells (+ Tiefling and DS Law Spells) and cast them 3 times (excluding cantrips). So far so good, that much they understood, 1:1 ratio. Levels 1 and 2 made some sense to them so far.

It's when trying to explain Level 3 and 4 that the discussion becomes confusing for them, I told them that:

- @ L3, they finally unlock the 2nd-L spells, as well as the spell slots for it.
- They can learn any combination of 1st level & 2nd level Sorcerer Spells (even if they only want one 1st-L spell and the rest are 2nd-L).
- The total spells they can fit is 4 (and 5 @ L4).
- They can only cast the 1st-L 4 times and 2nd-L 2 times @ L3 (cuz spell slots).

They were confused, mixing up the spell slots and the spells known because they thought they can only cast those spells 4 times or something like that. And the levels confuses them along the lines of "so it's only at level 3 that we get to unlock level 2 spells? and cast our spells only how many times? How do spell slots count per level? We can unlock level 2 spells but can't use them until we're level 3?" etc. etc.

I'll try to explain again in my own terms in our next session (or maybe send messages online), maybe even use an analogy of some sort. But then I wondered how everyone else explains this to their players who unlocked a spellcasting subclass or chose a spellcasting class.

Fellow DMs, how do you explain spell slots of higher levels to new players?
Players, what explanation was satisfactory to you or made the most sense?

I've already shown them the spellcasting table for sorcerers, it was in fact the reason they were confused about what makes "spells known" different and when to use "1st level and 2nd level spell slots" in the first place.
So it's most likely a comprehension fail since we were speaking in a different language with a different conversation when the spellcasting question was brought up.
But we do our D&D sessions in English.

I finished Zafaria and everybody keeps saying I should have gotten the Colossal spell here. I do not have the requirement as of yet. I only have up to the monstrous spell, but still, need to get the gargantuan spell before I can get the colossal spell. My question is since I've already finished Zafaria, can I still go back and do that quest again? Or am I SOL?
