No matter what I do, it always just triggers a light attack. I see people on youtube do a simple roll around an enemy and backstab, but my character just does a normal swing.

But more than that the principle involved has a number of ways it can be used so you might want to look at this even if you re not the sort of person who usually carries a pocket knife. Alot of weapons have a guard break weapon art. Also, to backstab, you can't block with your shield while doing it. Make sure you're directly behind them, and not paced a few feet behind them.

Backstabbing is fairly forgiving with the attack angle but quite strict with distance. You need to hug the back of the enemy. If you're too far you'll do a regular attack.

Decided to keep using the longsword, feels like a nice balanced starter weapon. Didnt know the weapon arts are the tools to break guard, I was trying to kick enemies and failing at it.

Ill try to get closer, I temd to keep distance. Seems counter intuitive, seeing my light attack connects too

Mastering roll bs is some of the hardest things you could do in ds3 e.e

Don't go near it if you don't think you can slog through all the ♥♥♥♥ and point downs.

In no particular order:

Spacing and punishing - Timing - Parry - Roll bs - Guard breaking - stamina management - mind games.

So Backstab is a solid release. It’s a dramatic effect – and as such suitable to be a closer. It’s pretty easy to do. If you’re comfortable performing with a pocket-knife then it is well worth a look.
